Here’s one pasta recipe that I want to share with you to try and taste – seafood carbonara.  My wife prepared and cooks this meal once, during a group gathering of teachers with their families held in Alkhobar beach, Saudi Arabia.  After that joyful gathering, my wife received more requests to cook for them seafood carbonara.  As I had witnessed how the individuals enjoyed the seafood carbonara, sharing the recipe with you will make you enjoy cooking seafood carbonara always.  Enjoy and God bless.

 



Ingredients:

3/4 kg fettuccine (flat pasta)
2 tbsp olive oil
2 tbsp butter
1 tbsp chopped garlic
1 pc white onion, chopped
2 chicken cubes
¼ tbsp salt
¼ tsp ground pepper
1 pc chopped red bell pepper
¼ kg each – deveined prawns, sliced squids, clams (halaan)
½ cup sliced button mushrooms
250 ml all purpose cream
1 can evaporated milk
Parmesan cheese

 How to prepare sauce:

Sautee onion and garlic in olive oil, stir in mushrooms
Add chicken cubes and stir until thoroughly dissolved
Add prawns, squids, and clams (wash and clean properly)
Stir in red pepper 
Add mixture of milk and cream
Stir continuously and bring to boil
Season with ground pepper and salt
Reduce heat and simmer for 2 minutes. 
Remove from heat and set aside.

How to prepare pasta:

Bring a large pan of water to boil, adding 2 tbsp of butter and salt.
Add pasta and cook for 10-12 minutes, or until firm and tender. 
Stir occasionally to prevent the pasta from sticking.  Do not overcook.
Rinse cooked pasta quickly in tap water, drain and stir in a little butter.

Serving:

Arrange pasta on a warm serving platter. 
Add the sauce over pasta.
Sprinkle parmesan cheese before serving.
This recipe is good for 4.
